Summary
The curse on lipids and associated unsaponifiables chemistry introduces their structure, nomenclature, sourcing and transformations (extraction, refinery, transesterification, fractionation and hydrogenation). Their specificities toward different analytical techniques are also discussed.
Educational goals
To get knowledge on the natural or synthetic raw material in view of their use in formulated products, have a critical point of view about their sourcing, make structures-proprieties relationships, and know possible techniques to identify or control the purity of a fatty raw material.
